A town with just over 1,200 residents, MacArthur might not be the first place you’d think of when it comes to starting a business, but Erica has proven that with faith, determination, and a bit of creativity, you can succeed anywhere.

The Birth of Auntie E’s

Auntie E’s wasn’t initially conceived as a business idea. In fact, it all began around the dinner table during a family gathering. Erica’s nephew, an avid baseball player, needed funds for his travel team. Amidst the challenges of the COVID-19 pandemic, fundraising opportunities were limited, so Erica decided to step in. She made cake truffles—a simple yet delicious treat—at the request of her brother-in-law. Little did she know that those cake truffles would be the beginning of something much larger.

Erica’s fundraiser was a hit, with over 60 dozen cake truffles sold, and people started asking for more. Encouraged by the positive response, Erica decided to continue making treats, and soon after, Auntie E’s was born. The name itself is a nod to Erica’s role as an aunt, with “E’s” representing her first name, Erica. It was a personal touch that resonated with her customers.

From Vision Center Manager to Bakery Owner

Before starting Auntie E’s, Erica spent 15 years as a Vision Center Manager at a big box store. She loved her job and her loyal customers, but the growth of her bakery eventually forced her to make a tough decision. After working long hours at both the bakery and her full-time job, Erica realized she needed to choose between the two. With a lot of faith, support from her family, and a little prayer, she decided to take the leap and pursue her passion for baking full-time.

This decision wasn’t easy, but it was the right one. The success of Auntie E’s continued to snowball, and Erica embraced the change with determination. She transformed part of her basement into a commercial kitchen and began offering custom cakes, desserts for special occasions, and even hot food catering. Auntie E’s quickly became more than just a bakery—it was a one-stop shop for all things sweet and savory.

What sets Auntie E’s apart is its dedication to customization. Whether it’s a birthday cake, a gluten-free dessert, or a dairy-free treat, Erica works closely with her customers to meet their specific dietary needs. A highlight of Erica’s journey came in 2024, when she was honored as the West Virginia Hive Survivor B of the Year by the New River Gorge Regional Development Authority (NRG-RDA). This recognition was a testament to her resilience and dedication to her business, especially as she navigated the challenges of running a business from her home.

Despite MacArthur’s small size, Erica has managed to spread the word about Auntie E’s through local events and festivals. From Daniel’s Vineyard wine festivals to arts and crafts festivals in Wyoming County, Erica is always looking for opportunities to connect with her community. Her approach is simple: put her delicious treats out there, and let the flavors speak for themselves.

The response has been overwhelmingly positive, and Erica has built a loyal customer base that continues to support her. Whether it’s through word of mouth or her active presence at local events, Auntie E’s has become a beloved name in the area.
