The Start of Something Sweet

Amanda Gibson had always loved to bake. Cookies, in particular, were her specialty. With encouragement from friends and family, she began sharing her creations at local events and directly from their home. Richard, who has a background in operations and logistics, saw the potential for something bigger.

Together, they decided to take a leap of faith and turn Amanda’s hobby into a real business. Thus, Gibson’s Goodies LLC was born.

They began by offering oversized, soft-baked cookies in a variety of irresistible flavors—from classic chocolate chip to their signature Reese’s Peanut Butter cookie, and the nostalgic favorite, Snickerdoodle. Word quickly spread, and what started as a small side hustle soon grew into a full-time family enterprise.

As demand grew, so did their menu. In addition to fan-favorite cookie flavors, the Gibsons have introduced seasonal specials, new baked goods, and even custom orders for parties, weddings, and corporate events. They’ve created a loyal following of customers who eagerly await their cookie drops on social media and line up at events where the Gibsons set up shop.

Family First, Always

One of the most inspiring aspects of Gibson’s Goodies is the way Richard and Amanda run their business—with family and faith at the center. Amanda handles all of the baking, and Richard takes care of logistics, packaging, delivery, and business strategy. Their teamwork, mutual support, and belief in their mission are the backbone of their success.

Today, Gibson’s Goodies is looking toward the future. The Gibsons are exploring options for expanding their production, adding wholesale partnerships, and potentially launching a mobile cookie truck to reach even more West Virginians.
